Cashew Pesto
Chef Sonoskus’ from Star Diner
- 1C Roasted and Salted Cashews, roughly chopped
- 2T minced fresh parsley
- 1T minced fresh basil
- ¼ C Extra Virgin Olive Oil
- 1 Garlic clove, minced fine
- 2T shredded parmesan cheese
- ¼ T freshly ground black pepper
Combine all ingredients in a large mixing bowl & stir.
