Kimberly Tarach recently opened a gourmet specialty store, Tryon’s A Taste of Olives & Grapes, featuring over twenty olive oils and over twenty balsamic vinegars, which change seasonally. In addition to extra virgin oils, in which connoisseurs detect secondary aromas like apple and almonds, Tarach sells oils infused with, for example, blood orange or habanero peppers. Like the other artisan culinary offerings stocked, these are sourced from faraway ports-of-call. Other items available include pastas from Italy, spices from the Middle East, and lavender from the Pacific Northwest. Visitors to the store get to sample oils and vinegars and tap into Tarach’s and manager Jessica Phillips’ knowledge of tips and recipes. For example, Tarach recommends using vinegar and oil during cooking instead of just as a topping, and using fruity balsamic vinegars as vegetable glaze or ice cream topping. Tarach was inspired to start the store because she and her husband have another business that takes them around the world, providing unique purchasing opportunities. They first opened a store near the Kennedy Space Center in Florida, but they didn’t like the location. After considering several markets, the couple decided on Tryon because it had a small-town vibe, and the niche was wide open.
